I'm picking back up the brew hobby after a bit of a hiatus. Saw some helpful discussions here and thought I'd join up. I'm a fan of English bitters and have dabbled some in mead making too. I had scaled up to an all-grain setup, but to ease back in I'm starting with extract. When I was down in NC for Thanksgiving, I had some great beers that helped inspire me to pick things back up. I just started a 5-gallon batch of bitter and am probably a bit too excited about it. There's something just so nice about having something fermenting along in the house. I think I'd like to experiment with some 2.5-gallon batches just to give myself the chance to brew more, try out different recipes, and hone my process. Looking forward to learning from and exchanging ideas with everyone here
