I kegged my first true to style hefe with a speise mix 8 days ago. How long should I wait for it to carb up? I have it setting in my closet at 70 degrees. I am thinking about putting my CO2 on it just to see where the pressure is. I can most definitely just hit it with CO2, and drink it; however I want to let it naturally carb as much as possible to maintain the traditional style.
