Real dry-hopping takes forever. The brewery has to take part of the beer and boil it down to an extract and then dry it out into powder. It's similar to dry aging a steak; takes about a month. Then they can mix in the hop powder, rehydrate, and pour it back into the beer. You can tell when a brewery just pours the hop powder straight in because the beer tastes gritty.
