Howdy folks! Questions! Was hoping to get a tip on fermenting/aging.
How long should/could I leave the primary ferment going? Its been 2.5 weeks. I plan to age it in a glass carboy before bottling but If its ok to sit in the primary I wonder whats the rush to secondary.? Will the sludge in the bottom do harm by and by?

store bought unpasteurized and pasteurized apple juice 5gal
1 cup brown sugar
belgian saison yeast
thinking of pitching in some ground ginger root at some point
primary had a beginning gravity of 1.042
78-80ish F constant temp.

You'll get different opinions on this, but if you're going to age it any more than a few weeks I would rack it off the lees (sludge) when fermentation is complete. Some people don't bother, some do.
