Do I need a plastic faucet?

I am building an 8 tap kegerator and I plan to always have one tap devoted to cider/mead/wine. I have read that you need to have a plastic faucet for these more acidic beverages, but would stainless work instead? I plan to get all perlick faucets which I have read are entirely stainless, so if I got a plastic shank could I use one of these faucets instead of a plastic one?
 
Alright, thats what I figured, but I wanted to make sure I wasn't missing something. I really didn't want to cheapen my kegerator by having 7 perlicks then a plastic faucet on the end.
