For those of you who own charlie paparazians homebrew book there is a recipe for a real ale extract brew. any ways he says primary for ten days then keg or bottle for seven. This is obviously a very short fermentation time, but its chalie p man! Ive got it in primary now so what do you guys think?

I think it is due to the fact real ale has little carbonation and somewhat low abv. So it should be ready to drink fresh and low carbed at 17 days. Assuming you didn't get any strong off flavors in primary that need to be scrubbed.

I regularly (read: nearly every brew) am finished fermentation in 4 days, crash cool for 3, keg on day 7, force carb from 2-3 days and bam, tapped and drinking by day 10-12 if needbe. These beers taste good.

There's no denying that a bit more time to clean itself up improves the taste, particularly after getting on gas as it needs to sort of settle the ph changes from the co2, but you don't need to be Charley P. to crank out high quality beers in a week.

Also keep in mind that it may be an old recipe from the days of the autplysis boogieman. They thought the yeast was dying when it settled to the bottom. So they'd get it out of primary asap to avoid it. We know better nowadays. Leave it in primary till it settles out clear. It also gets rid of fwermentation by-products at this same time.

What Mike said. Its a style of beer that is best when fresh and doesn't require a lot of time to come into it's own. English Milds generally are the same way.
