If you are not carbonating it will be fine to use wine bottles and corks. If you are going to prime and carbonate then you should use beer bottles or as suggested, champagne bottles and cages.
 
Yeah your odds are very low, if all the fermentable sugars are gone and you have a fg of under 1 I'd say it's perfectly safe. Now if the ferment stalled or hasn't finished you will go to your basement and find some pushed out corks.
 
If storing in wine bottles for extended period of times you might need to condition it like a wine. Some oxidation might occur without using chems as an antioxidant. Hopefully someone with sulfite experience can chime in.
