Any ideas on why my extract beers might consistently be coming out too dark? both my wheat and my kolsch aka my first 2 batches have had this problem and I would like to fix it by the time I get to batches 4 and 5.

That's just what you get with extract. Try adding part of your extract at the beginning of your boil and the rest in the last 10-15 minutes. DME is a little lighter than LME, and use the lightest extract they have for your base if you are using steeping grains, like extra light malt extract. Your extract batches will always be a little darker than their all-grain equivalents.

Agreed.

Extracts tend to be dark for the style, especially when using LME. You can try dumping half the extract in towards the end of the boil, it helps somewhat. The only way to cure it completely is to go all grain.

The good news, however, is that it doesn't effect the taste of the brew.
