I am drilling holes in my e-keggles for valves, fbs, recirculation elbows and all that good stuff. My question is where is the best place for a thermowell to be drilled? I will recirculate through a RIMS system w/ temp sensor too. Do I even need another temp sensor in the MLT if I'm using a RIMS?
 
I'm using a PID in my direct fire mash tun.

I am going to mount 2 temperature sensors. One temp sensor will be in the fitting that comes off the pickup before the pump to sense the temperature of the heated wort off the pickup.

The other temp sensor will be in the main mass of the mash. I might mount this one on a float so that it is a few inches below the top of the mash, wherever that might be.
