I am trying to decide how to schedule my lagers.
For the amber in the primary now, I am thinking 10 days in the primary at about 48*, then a 48 hour Diacetyl rest at room temperature, then move to a secondary for three weeks at 38*, then move to a keg for three or four weeks of lagering, again at 38*.
Does that sound right? Would it be better to leave it in the secondary longer, or the keg?
The amber is a Dos Equis Amber clone from AHS, with S-23 yeast.
