    Cooper's Carb Drop

I have made some odd size batches the last few months which lead to using carb drops and seem to have issues with my cider carbing up. Most of my cider sat for about 6 weeks fermenting....1 racking prior to bottling. I am wondering if maybe my problem was a lack of yeast still in suspension...

    Question about checking carbonation

I am doing a 1 gallon batch to test out the pasteurization technique. I am taking it down to about 1.012ish, priming, and then bottling. Since it will only yield about 10 bottles, I am curious at what point should I start to check the carbonation? Bottles will be sitting in a tupperware...

    Time Frame?

I just started a cider at 1.050 and want to stop it at 1.012ish in order to pasteurize. I used Nottingham Ale yeast. What type of time frame do you think I am looking going from 1.050 to 1.012?

    Burton Water Salts

I recently purchased a Brass Ale kit from Midwest. Inside the kit is some Burton Water salts. The directions don't reference the use of them. I will be using spring water as my water base. So.....a couple of questions: 1. Do I need to use them? 2. If so, when do I add them? David

    Water

I am on well water with a softener and all the batches I have done have come out reasonably well. Being the curious person that I am, I want to try my next batch using store bought water to see if I notice any difference. I am confused on what type to buy? Do I used distilled, spring, etc...

    Definition of Aging....

Do most of you refer to the aging time from the moment you bottle/keg it or start the aging clock when you pitch the yeast? In other words...if one were to have a cider that had spent 2 months in a carboy and then you bottled it, do you consider it to have 2 months of age on it or did your...

    1 Gallon Glass Jugs....

For those of you that have used the 1 gallon glass jugs, how much of the yeast packet have you pitched for fermentation? I am using Nottingham Ale yeast and was planning on pitching half a packet into each of 2 jugs but was curious on what others have done. Thanks! David

    Gimmee a recipe!

Bought two 1 gallon glass jugs. Got some Nottingham ale yeast on hand. Gimmee some recipes to mess around with other than the standard cider or apfelwein recipes! ETA: I like the standard cider and apfelwein...it's just that I have 12 gallons of that bottled. :tank:

    Apple Juice Concentrate Question

I bought a couple of 1 gallon glass jugs to mess around with some different recipes. For those of you who use apple concentrate...do you add water just like you were making apple juice to drink or is it straight apple concentrate into your carboy??

    WYeast 4766 and Cider....

I plan on doing a 3 gallon batch of local pastuerized cider and pitching WYeast 4766. This is my first time using this yeast. Also, for the first time, I plan on adding NO sugar...just let the yeast work on the natural sugars in the cider. Hoping to end up with a 5% or so cider. Since...

    Is Cider Seasonal?

Just started delving in Cider this fall. We have a local orchard that supplies gallon jugs to be sold at my supermarket. The question just hit me the other day...is cider seasonal? Is it safe to assume that I am not going to see this cider in the store for much longer??

    Dry and Carbed?

You hear a lot of talk about backsweetening and carbing but has anyone ever done cider or apfelwein and kept it dry and carbonated? Thoughts?
  16. DWavs

    Let me get this straight....

If I want to store carbonated bottles at room temp and do the following, I will not need to worry about pasteurizing or bottle bombs: 1. Let the cider or apfelwein completely ferment to 1.000 or lower getting the same reading over 3 day periods. 2. Backsweeten with Xylitol since it will not...

    Need advice...

I racked my 3 gallons of cider into a secondary in order to start clearing. I lost quite a bit of volume...especially since the primary was not topped off like it should be. :( I have probably 3 inches of head space in the 3 gallon better bottle. Should I top it off with another gallon of...

    Newbie Questions

My buddy made some cider and gave me the itch for it but have never done it before. Have a few questions that I was wondering if someone can answer. I would like to make carbonate it since I want to bottle it and make it with a fairly low alcohol content...sorta like hornsby as an example...

Probably a stupid pot/turkey fryer question...

Probably a stupid question but.... I recently bought a turkey fryer. It is the type that has the ring that the aluminum pot fits perfectly in. My stainless steel pot is slightly smaller in diameter and fits but not a snug fit like the pot that came with the fryer. Can I use the stainless...
