I plan on doing a 3 gallon batch of local pastuerized cider and pitching WYeast 4766. This is my first time using this yeast.

Also, for the first time, I plan on adding NO sugar...just let the yeast work on the natural sugars in the cider. Hoping to end up with a 5% or so cider.

Since this is the first time using this yeast and first time not adding any sugar of any sort, I wanted to ask if their is any flaw in this plan? i.e...wyeast 4766 works better with sugar, etc.....

Thanks!

I don't see any flaws at all. It's cool to see someone not want to add 10lbs of sugar. I'm predicting about 6% to 6.5% if you let it ferment dry.

Can't wait to hear how it turns out.
