Poll of your views on Daylight savings time - changes.

Should it stay as is or be set to Daylight Savings or Standard time year round. I am not a morning person, so I favor Daylight Savings year round for more light in the evening. I hate the changing.

Ordered a Unibrau, anyone with tips for brewing with it?

I Ordered my Unibrau yesterday. It looks very straight forward to brew with it. But does anyone that uses one have any tips that I might not have thought about? I ordered with with these options: Kettle lid to help get to boiling faster. ETC controller, it seemed simpler and just as good as...

Just watched a doumentary on Woodstock '69... half a million kids - no violence....

Never before - never since.... What was so special then with the war in Viet Nam, extreme politics, similar to now... Why so peaceful then and probably impossible today? BTW I was 15 then, just a little young to attend....

    pH tested, no adjustments necessary?

After 8 years of quite successful brewing with just tap water and no pH measuring, I got a R/O system and pH meter. I believe that I calibrated the meter correctly. My question is - Beersmith predicted that I would have a mash pH of 5.63 and gave 1.05 ml lactic acid for a target of 5.2. I...

Do you treat water and check pH?

I started a thread a while back asking how important people thought adjusting for pH was. The poll gave a pretty even split from important to not so much. Given that there are some very advanced brewers, middle experienced and beginners, I would assume that the majority of brewers make no...

Southern hops growers - heat tolerant hop varieties?

I live in east coast central Florida. I am thinking of starting 2 or 3 varieties of hops. From those of you that have grown hops in a hot climate, what has worked? Which to avoid? I see that Cascade is heat and alkaline tolerant and one of my favorites so that might be one. Suggestions?

    S-04 good or bad.

In another thread I got someone saying a significant number of homebrewers do not like S-04. I have had zero issues with it and have not heard a big dislike. What do you say? Added: This is about whether you like or dislike S-04, and not a comparison to, or a preference for another yeast.

Will you be braving the weather to see the lunar eclipse?

With a large portion of at least the eastern US being very cold, will you go outside to see the lunar eclipse? In my area it starts after 9:30, doesn't get full until after 11pm and doesn't end until 2:48 AM. It will not be so cold here. But in the Northeast it will be in the single digits...

Should I rehydrate EC-1118 or not bother? Pitching soon.

Just mixed up a Cru Select Pinot Grigio. The directions say to just sprinkle on the surface and close it up. The yeast package says to rehydrate. I have always sprinkled in wines in the past with pretty good success. I had one 3 gallon kit come out bad. I forget which kit, it was a red...

RIP my trusty old Corona Mill friend.

After over 6 1/2 years using a Corona style mill, and making great beers with it, I just ordered a Cereal Killer mill. Time will tell how much difference there is.

pH: How important is adjusting for pH

I used to live where I apparently had great water. I never got into water or pH adjustments, 1) because my beers were good. 2) because I didn't get around to sending off a sample or buying a meter. I am questioning how soon I will get into really checking water and pH since I don't think the...

    Wild yeast capture success. Maybe

A little over a month ago I started an experiment. I made a small weak starter and dropped a Hibiscus flower in it. After a day there was a little foam around the side of the jar. I fished out the flower and let it ferment. It smelled like beer so I did a few more steps with the starter...

    Starter with old s-04

I advise against making starters with dry yeast. It is not needed and it is cheaper to pitch 2 packs if necessary for cell counts. But, I had a pack of yeast with the date of 07/2016 that I wanted to use up so I rehydrated while boiling a starter wort. When I got the wort done I looked at the...

    Frozen yeast from 2/23/12

I have a frozen yeast bank. Most of it is getting quite old now. I had a period where I didn't take the time to step up the frozen yeast in time for brew day, then a period of using dry yeasts, then about a 1 year hiatus from brewing while fixing up my house then making a relocation. Well I...

Thoughts on using Centennial and Saaz.

I am working on a recipe for my 100th batch. I have started a recipe for a Smoked ginger beer. I started from a recipe that I found online. I can't find it again and have altered it quite a bit anyway. 4 lbs Rahr two row 2.15 lbs mesquite smoked malt Because that is what I have on hand...

No wonder I am having trouble cooling my wort.

Since moving to Florida from Rhode Island I noticed it took a lot longer to cool my wort with my IC. No wonder, I just measured the temperature of my "cold" water - 80 degrees!!! Yikes. I am going to have to figure something out.

Cold Crash and Gelatin - amazing.

Where I used to live I apparently had extremely versatile water. I could brew any style without adjustments and get a great beer. Given 2-3 weeks fermentation and 3 weeks bottle conditioning, or a week or so in the keg and I would get pretty clear beer. I use Gelatin once in a keg and didn't...

97th brew and no two the same so far.

I hear a lot about repeat-ability, but there are so many ingredients to experiment with. So many different styles to explore. I have done a couple alike, trying to improve them. Most often they are just different. The beer I am brewing today, Brown Eyed Girl the Sixth, is one that the...

    Help me design a beer.

I have been fixing up my house for sale and a move. It is now 2 weeks away and I have not brewed in almost a year. I am going to list my grains and hops. Pick 4 grains and 4 hops. I will then determine the amounts to use and what style they might make. I will use the grains and hops (4 each)...

Prayers for those in Texas. Harvey is going to nail them! Heard on the news about predictions of 3 FEET of rain in places.....
