    When to rack into secondary?

I think it's a style issue. Do it of you want to. I just moved a Belgian I've had in primary for a month to a secondary, but only because I thought it might help clearing it up. I just popped the first bottle of a wheat beer i skipped the secondary on and it tasted and looked just fine. Again...

Blowoff valve for high gravity beers

Excellent point. The setup actually looks cooler to my friends who have no idea what's going on.

Blowoff valve for high gravity beers

Is it typical to have to install a blowoff assembly with higher gravity beers? I've made a tripel and an IPA that both had OG of 1.060. Each had about a gallon of headspace and still needed the assembly.

    honey amber

Sounds good! I tried a recent brew a little early as well. Turned out fine and will probably be better in a few weeks.

    Belgian tripel still bubbling...

I have a NB Belgian tripel that has been bubbling away for a little over two weeks now. Although its slowed down a bit this morning, is this normal? How long should I wait before racking to secondary once the bubbling stops? Thanks for any insight.

Deciding between 5g and 10g mash tun

I was thinking along those lines. I like to brew small enough that I can finish a batch before I am craving something else. If I can still do 5 gallon batches of session beers and the occasional high gravity Trappist type I think I'd be set. Thanks for the perspective.

Deciding between 5g and 10g mash tun

Are there any rectangular ones that people would recommend? Most of what I'm seeing as far as reviews go is for the round ones. Would I need to drill a hole in it? Or would do they come with spigots attached?

Deciding between 5g and 10g mash tun

Thanks a lot! It just hit me that I have a rectangular one sitting around. I might just use it!

Deciding between 5g and 10g mash tun

Thanks for all the tips guys. It helps out a lot. I'll be scouring around for some 10 gal coolers.

    Opened bucket

It should be okay. As long as it wasn't anything prolonged.

Deciding between 5g and 10g mash tun

So it wouldn't be a bad to have a 10 g mash tun and a 5 g to hold the spare water? I was under the impression that they needed to be he same size. If I can do one of each that'd help with cost and space.

Deciding between 5g and 10g mash tun

I'm looking at going into all grain brewing for my next batch. I've been researching quite a bit on how to make my own, and I feel confident that making one isn't the problem. From your guys' experience, what's the difference with brewing between a 5 gal and 10 gal? From what I...

    What defines a pale ale?

This was specifically a stone pale ale. I assume it's APA.

    What defines a pale ale?

That helps a lot. I've got to get into interpreting these styles.

    What defines a pale ale?

Recently had stone brewery's pale ale. I thought it was awesome, but couldn't help but wonder why it was considered a pale ale. It tasted pretty aggressively hopped and the color was more amber in color. Felt more like an IPA to me. Are my tastes buds off? I would love to brew something like...

    Bottling too soon?

Thanks for the responses. I'll take some readings today and then on Sunday. If the readings are the same is it normal for the beer to finish fermenting that quickly?

    Bottling too soon?

I have a wheat beer that has been in primary for 7 days now. The airlock hasn't. Bubbled for 3 days. Without taking the final gravity, can I assume it's ready for. Bottling? Or should I wait another week?
