Adding Vanilla to Imperial Stout - Bean vs. Extract?

Go to your local pharmacy and ask for a couple of empty 3 ounce liquid medication bottle. Chop your beans and add 1 to 2 ounces booze of your choice. Shake it often. Do this ahead of time. I try to have a bottle on the shelf ready to go. It won't go bad and you don't have to do the scrape...

Getting ready to start my first lager.

Use a blow off device, not a bubbler. Because you can't see the carboy, you might tend to not watch fermentation as close. A mess in the fridge is easier to clean up than a mess in a closet but it is still a mess. I switch to a S-type airlock before I start dropping the temperature as the...

How Long Is Too Long In the Fermenter?

I've had Beer Munchers Centennial Ale in a carboy for as long as 8 months with no off tastes. It's not a big beer and my beer nose is pretty good. It has been at 50 degrees or less the whole time and that may have contributed to my good fortune.

    Brew Boss Systems

Amazing, easy to brew, easy to clean. FANTASTIC customer service. 20 minutes to heat strike water vs. an hour with a blichmann burner. Only 1 pot to clean instead of 2 and rinsing out the 3rd, an hlt. Running pbw in the EXCHILERATOR vs using a toilet brush on an immersion chiller. Steady no...

    The Axe (Imperial Irish red)

IMO the crystal 120 is a bit high. I think you will get too much prune/raisin flavor. I've change all my "red's" to crystal 40 or 60 because of that flavor profile. Even too much 80 will "twang" it. I like the honey as it adds a bit of different something to the nose. I just brewed a red...

    Adding Cherries to a Stout

I have had great luck with dried tart cherries from the health food store. 3 lbs for 10 gal batch. The last 20 minutes of the boil. It extracts the flavor very well with no odd flavors. Does not effect/block the false bottom when I drain the kettle after cooling (immersion chiller and...

    Little Tiny Bottles?

The Coronita Extra bottles are 7oz. But they are clear. I try to make 4 or 5 of them when I bottle as samples to try starting about week 3.

    Winter brewing, no running water

I have chilled in below zero temps with an immersion chiller. Need to do the hose hook up last second and turn off and disconnect quick once your are done. Also have left it on the driveway to cool. I was worried about the wind blowing stuff under the lid so I covered the top 1/4 of the kettle...

    Adding Coffee to my Porter

I soaked grounds in some Grey Goose vodka for a day, then ran through the coffee filter directly into the carboy. No infection risk there.

8 gal to bottle but only 5 gal bucket

why did I not think of the easy answer? duh, I overthink and overplan. I'm not sure on the exact amount I have to bottle over 5 gallons but I can prepeare boiled sugar for bottling for say 4 gallons and reduce as needed depending on the "2nd fill"... I am also the guy with 5 propane tanks...

woe is me. hold my hand

Just taste it. If it taste like rocket fuel.... better luck next time. That won't go away, I know, my AC kicked the bucket when I went away during fermentation of a 1.075 ale. It tasted like a bad chem experiment then and 6 months later in the bottle. Nobody died and you may cry but it is a...
