    Dry Yeast Pitching

    I always directly pitch my dry yeast and have never had a problem. I don't see the need to re-hydrate based on my experience, but many people do. I would be interested though if any academic literature has addressed the topic... I may have to go do a search now

    Head retention

    I find that including oats in my grain bill really helps with head retention. They can be worked into a lot of different beer styles as well. I really enjoy using them.

    I use my dishwasher. It has a cycle choice that sanitizes things. It get's them good and hot, which kills the bugs at least as effectively as starsan, maybe better. I've never had a problem.
