So I made my first yeast starter today because I am making a higher gravity IPA. My home brew store is only open on saturdays so it makes it hard to plan ahead sometimes. My question is since I made my starter today and it should be ready in 24 -48 hrs from what i read, can I make my IPA wort today and just store it in a carboy until my starter is ready? I usually just pitch the vials of White labs in and have no issues.

on a side note I brewed a Nut brown last night and used Danstar's Nottingham yeast. That stuff is amazing. Pitched at 930pm last night and it is bubbling away at 8am this morning! I just pitch it in the wort...i do not hydrate like the package says. What is the point of hydrating? This is the 4th time I have used this dry yeast and never had issues!

you should not brew your wort until you're ready to pitch...you'll just be giving other bugs the chance to get a head start on the wort.

by rehydrating yeast acc to the manufacturers recc, you'll end up with more viable yeast in the wort. it'll ferment without rehydrating, but you'll get a bigger population of healthy yeast by doing so. same with just pitching a vial of WL, you'll get a fermentation, but not ideal.
 
thanks for the information....I will hydrate from now on now that I know that. I am still waiting for my yeast starter to get going. It's almost been 24 hours now but I've read it takes upto 48hrs sometimes...I haven't brewed my IPA yet though....i am waiting on the starter...brewing another Oktoberfest ale now since the first 5 gallons is almost gone!
