So I lugged home all of my gear to brew a holiday IPA today with my dad and my uncle (and of course I brought a couple kegs with me). My wife and I are crashing here with my parents for a couple days, so here's my issue:
Do I chill and pitch tonight, then let the beer start fermenting and travel back to the city (~1 hr.) with fermenting beer
OR
Do I wait to pitch until I get home on Saturday or Sunday?
Either the beer will have started fermentation for two days, or the wort will be sitting for two days. What should I do?
