Yeast for Shiner Bock Clone

I am planning a Shiner Bock Clone but only have access to Safale S-04 and US-05 yeast at the moment. Limited to these, which would you select? What temperature would you use?

4lb 2-Row
4lb Vienna
3lb Flaked Corn
1lb Cara60
0.5lb CaraPils
0.063lb Carafa3

0.5oz Warrior 60 min
 
Of the two, I'd say US-05, at as low a temperature as it will ferment. I've used the "chico" strains as low as 61F. I wouldn't be surprised if you could go lower.

But really, Shiner Bock is a lager, and S-04 and US-05 are both ale yeasts. I don't think I'd expect to be able to make a convincing clone with either.
 
go with the US-05. I have fermented as low as 55 degrees. Ferment as low as you can and expect it to take a little bit to get to FG. This will produce a very clean Pseudo Lager.
