I have to travel unexpectedly and am in the middle of making a starter. My options are to leave the starter out for 5 days or refrigerate after one day and resume again after I get back. I would expect that the yeast would consume unused sugars after I take it back out of the refrigerator.
 
5 days probably won't hurt if the temps aren't too high. Personally, I would stick it in the fridge as i'm walking out the door.
