I'm brewing a Saison using WLP 565. After one week I've went from 1.063 to 1.011. Over this past week I've raised my temp from the mid-60's the first day to now holding it at 78. I am happy with where my fermentation is at (although a little lower would be fine) and am past the flavor producing time period. However, I plan to keep the beer in the primary for a second week to "clean up" any undesirables. My question is would there be any problem with lowering my temp back down in the high 60's at this point? Would this be a smart move to avoid any auto_____ (forget the term).
