well i tried it in small scale last time but not with S-05 this one is my first try with bear yeast.
and as i mentioned it work awesome.
well when it dry it long last like any other dry yeast! 1 year or so in fridge.
here is similar method you can watch.
i just had bit different here is what i used:
1 Packet of S-05
2 Cups of Wheat DME - Approx.
1/2 Cup of Sugar
1 Cup of Barley DME "you can use Cornmeal too"
1 Vitamin C tablet +1 tablet of Vitamin B1 "or u can use fresh Ginger or anything acidish enough to make yeast happy"
1. tea spoon of yeast nutrient
Enough potatoes peeled and cooked to make 1 cup of mashed potatoes
here is the procedure:
make 1 cup of mash potato and don't throw away potato mash water. if u did thats fine just make starter and dump your dry sachet of yeast or old yeast wash you have.
add starter to cool down mash potato and slowly mix it with wheat DME & sugar, mix them well "Don't make it thick, yeast have to reproduce themselves"
let it seat for at least 4 hours till you see bubbly dough like attachment i posted.
and it smell sweet dough that means its ready
slowly add barley dme to mix till it make thick enough to role like that one i posted. roll out until about 1/8" thick if you make it thicker it take long to dry out since yeast in air produce water & co2 mean long dry time.
then cut it in pieces and put it in warm place in general warmth yeast can handle or very very low temperature food dryer.
and after few hours grind dried yeast and woalah you got yourself like a kilo of your yeast :rockin:
just make sure you cover your yeast dough while reproduce with muslin bag or something so air can enter but not bacteria or other bad stuff.

last but not least please only use cornmeal if you ran out of dme. coz it add corn flavor to your starter next time you use it
