I made a cream ale loosely based on the Cream of three crops in the recipe forum.
7.5# two row
1# flaked maize
8 oz minute rice
8 oz red wheat
4 oz acidulated

.5oz Willamette @ 60 and 30
1oz liberty @5

I slipped and dumped the rice into the grain so it had to go through the mill.
Biab Mashed @150f one hour and temp dropped 3 degrees and got better conversion for my 5.5 gal batch then expected.

My tilt reads a couple points lower then my refractometer but either way the attenuation using the US-05 seems high. I am sure it will be a dry crisp beer (my goal) but only wanted 5.2 abv and after 7 days it still has a light cover of foam/krausen but most has floculated. This 5 package lot of US-05 has been getting me around 83% attenuation but this one keeps going.

I can see a few chunks of yeast falling it is now Day 8 of fermentation. Show it dropped another point to 1.003 and I am thinking of pulling a hydrometer sample to see what the gravity really is. Does not look infected, looks like nice yeast bubbles across the surface.

I'd push out a sample with some CO2 and test it with a hydrometer then taste it.
Are you wondering if that batch of US-05 got tainted somehow? Or just coincidence?
 
I just have never had a batch of beer using us-05 actively ferment so long and had this great of attenuation. Dang 2:30am and I have to go pull a sample, I just have to.

Well I used my thief to pull a sample, yes, not the best way but only way I can.
Hydrometer looks like a little less then 1.006
Flavor is light malt and hop. Thought would be more hop flavor or bite but then again it is low ibu plus not carbonated. Maybe I should have put in another ounce of liberty at flame out?
 
I have never dry hopped. Even though it is pretty much done fermenting can I still add them? I had planned to keg and bottle this week for a party next weekend. How should I add them? In a ss tea ball set down in the fermenter? In the 2.5 gallon keg? Make a tea and add to keg and rack onto it?
