I made a cream ale loosely based on the Cream of three crops in the recipe forum.
7.5# two row
1# flaked maize
8 oz minute rice
8 oz red wheat
4 oz acidulated
.5oz Willamette @ 60 and 30
1oz liberty @5
I slipped and dumped the rice into the grain so it had to go through the mill.
Biab Mashed @150f one hour and temp dropped 3 degrees and got better conversion for my 5.5 gal batch then expected.
My tilt reads a couple points lower then my refractometer but either way the attenuation using the US-05 seems high. I am sure it will be a dry crisp beer (my goal) but only wanted 5.2 abv and after 7 days it still has a light cover of foam/krausen but most has floculated. This 5 package lot of US-05 has been getting me around 83% attenuation but this one keeps going.
