Hi,

After some experience with meads and beers Im starting to experiment with diferent braggot recipes. I realy like kvass aaaand wheat beers. So I thought maybe I could do a kvass inspired braggot.

Could someone more experienced in recipe writing check this out?

16l water

1.2kg dark wheat
700g caramel pils
100g melanoidin

450g of toasted dark rye bread

600g honey

10g Tettnang @60MIN

1h @ 68C for bread and grains

1h boil

1pack of MG M20

Any feedback would be super helpful!

  • Depending on the maltster, the dark wheat will have enough enzymes to self-convert, but it’s pushing it to think it will break down all of the other starch (caramel malt, bread) you’ve got in there. I’d recommend replacing half to two thirds of it with pale wheat malt.
  • I think that’s too much caramel malt. I’d recommend 100 g, and then 25 g of honey malt on top of that.

Ok,ok. Thanks for the insights. Something in the lines like this?:

Wheat 600g
Dark wheat 600g
Pils 600g (or leave this out completely?)
Cara pils 100g
Melanoidin 100g
Honey 25g
 
I've made kvass multiple times and it's pretty sour. That's actually the main driver of the flavour, not the bread itself.

If you want to make it like a kvass, maybe make a real kvass from wild fermentation and replace parts of the liquid with it?

I missed that that was Carapils. If it’s for foam, the large amount of wheat has you covered anyway. And its selling point is that it has no flavor. I like some caramel in here, but would recommend a light-ish one, like 10L or 20L, or Caravienne, or a light (check, some of them are fairly dark) English light crystal.
