I live in Victoria BC, and while there is a lot of really great craft beers out here, there isn't a really heavy hop bomb I can get my hands on that's nice and dry with a high alcohol content. I was wondering if anyone wanted/could post their favorite DIPA recipe?

Much thanks in advance,
PagodaBrewingCo.

Mine is more a general formula:
85% American Pale
5% Crystal/Carapils
10% Refined sugar (by extract)

OG ~1.070-1.080

Adjust water so you have ~150 PPM sulfate

Mash ~149-150 F for 60 minutes

Bitter with Columbus ~150 IBUs (I like the slight harshness to the bitterness Columbus provides)

~4 oz of your choice of hop(s) at flame-out (I usually add some and let the wort sit for ~5 min before I start the chill and add the rest of the hops)

~4-6 oz of the same hop(s) for keg/dry hopping

Ferment cool with American Ale yeast , FG should be around 1.012.

My favorite combo so far has been Columbus, Simcoe, and Amarillo. Swapping Centennial for the Columbus gave me too much fruit for my tastes. I've got one going with all Galaxy now that I'm excited about as well. This recipe post has notes on the hops used by some of my favorite (D)IPAs, take a look to get some ideas.

A lot of brewing a great hop bomb is process. I was never happy with my hoppy beers until I started kegging, now I can flush everything the beer touches post-fermentation with CO2 to minimize oxidation. Force carbing and keg hopping play a big role as well.

Thanks for the reply!
Sounds like a pretty good formula. I'll have to give it a try this weekend. Is the refined sugar for extra dryness?

Exactly, one of the big problems with DIPAs is that if they are too sweet they end up tasting more like an American Barleywine. You could also probably get away with just mashing in the mid-high 140s and backing down on the crystal, but this method has always worked for me.

Your system efficiency will take a hit with all those hops sucking up wort, I drop my assumed by 10% when I am writing the recipe to ensure I’m not low on the gravity.

This one turned out pretty awesome. I had someone come over, just after drinking a Pliny the Elder say "Damn, this is better than the Pliny I just had!". Much drier than I expected (I added a little nutrient, finished at 1.012 from 1.092). I'm still tweaking it though. I think all it needs is to increase the hop quantities some The flavor of the hops and malt is definitely there. It is definitely quite hoppy and a nice dry DIPA, but the hophead in me wants even more :D . I am brewing my IPA now, and this again once hop harvest comes along.

Use RO water.

ODaniel:
That sounds really nice too. I think I would take out the honey malt as I'm trying to cut out sweetness. Sounds really good with that hop bill. I've always wanted to try Pliny, I've heard it's really great, so that's a pretty big compliment I imagine.

OldSock:
Good tip on the hops sucking up wort. I had never really considered that before. Think it would be too dry if I mashed in the high 140's, and still used the refined sugar?

Delicious sounding recipes so far. Lets keep 'em coming!

It all depends how strong you are aiming for. If you are going for the low end (~1.070) I think 149-151 is a good range, towards the top of the range (1.090+) you should certainly go lower. My Pliny the Younger clone was a bit too sweet even at 85% attenuation (1.094 > 1.014). For that one I did the bulk of the conversion at 149 F and then boosted to 156 F for a few minutes to finish conversion (plus 1.25 lbs of sugar in 5 gallons).

I don't like my DIPAs real sweet either. The honey malt just adds a hint of extra flavor, not so much sweetness, especially when it finishes so dry. I didn't have it in my first couple batches then added it in. I'm glad I did. I wasn't sure about the sweetness it may impart but figured I would try it. Worked very well.

As for Pliny - it is a great beer, but I am satisfied, if not prefer, 3 Floyds Dreadnaught (haters gonna hate).

Also just realized I forgot the mash schedule - just added that to my previous post.

I love Denny Conn's Rye IPA
for me it's 30 days grain to glass.

I do like the Rye IPA from above as well.

I do love a good Rye IPA. Not going to get around to brewing this weekend. Got another week to pick a recipe. Great suggestions so far. That Rye IPA hop bill would work nicely too. Friend of mine has a bunch of Mt.Hood dried and ready for action.

How would these recipes respond to a little oak? I want to do a DIPA with some oak to sample an IPA how it was in its days on the boats.

Great Divide (anniversary beers) and Southern Tier (Oaked Unearthly) are some great commercial Oak aged IIPAs.

A few of my favorite IIPAs are 3 Floyds Dreadnaught, Pliny, FireStone Walker Double Jack, and Bell's Hopslam.

From all I've read, the oak casks they used to hold IPA were lined with pitch to avoid contributing oak flavor and spoilage microbes. It is certainly something that many breweries have tried, but I haven’t had one yet that I really loved. If you want to do it I’d add the oak along with the dry hops so you aren’t adding any additional aging.

that is a nice list. I was hoping to see Great Divide Hercules in there, as I have been trying to clone that one for a while. My guess is it has warrior, simcoe and possibly something else. Do you have any thoughts on that beer?

This is a recipe that has received rave reviews from others who have brewed it, as well as those who have tasted it. It's similar to Ninkasi's Tricerahops (in fact that is what I was shooting for, as a clone), but generally people prefer this homebrew version.

Ok,

Sorry to dig up a long lost thread but due to life circumstances I haven't been buying ingredients. Only brewed a couple SMaSH recipes. Despite this, I am back in action ready to brew and should be putting a IIPA into production within the next 7 days.
