I have a rauchbock using pecan smoked barley doing a diacetyl rest right now. Tomorrow I'm gonna brew a pecan smoked rye lager to pitch on the yeast cake. Both will be served at our Oktoberfest.

After 2.5 weeks at 54F I measured the gravity, it was down from 1.076 to 1.019. I raised the fermenting temp by 2 degrees/day for 3 days, then bumped it up to 64F for the past 3 days.
