I'm planning on a brew day this Saturday and plan on making a light wheat beer with the following:
6.6 lbs Briess Bavarian wheat LME
.5 lbs Crystal 10 (steeping)

The only hop addition will probably be at 60 minutes, I'm using Hallertau hops (4.1%), and shooting for about 13 IBU.

Here is my question.... The fiancé wants a fruit beer so the above ingredients are the plan for the base, but I am not sure what yeast to use. I picked up some WB-06 at my local HB shop. Is this yeast good for a wheat beer that will be racked on to fruit (mixed berries) in secondary? Or should I go pick up a cleaner yeast like S-05? I keep my fermentation buckets in the basement, previous beers have fermented at a pretty stable 66-67 degrees.
Thanks!

If you want a german hefe taste, which it looks like by your recipe, use a german wheat yeast, like wb-06. Ferment in the low 60s if you can. Its going to give a banana and clove flavor. Mixed berries will go good with banana and clove, there are no clashing flavors there. A clean yeast is just going to taste like berries, and generic american summer ales. Id go with wb-06.

Though have you given your fiancee a german wheat beer to try? They may like it as is, as they are somewhat fruity, and taste like banana bread.

giraffe is right, you need to nail down what type of wheat beer you are after. A true German hefe isn't for everyone. I would suggest taking a look at Wyeast 1010 American Wheat strain. It will add a little citrus flavor to your beer that would pair well with the mixed berries. What hops and amounts are you looking at?

She likes German wheat beers but wanted me to make some sort of fruit beer for her that doesn't have a lot of hops. I might split it up and only rack half of the beer onto the fruit to see what it turn out like by itself.

I'm guessing on a 1.045-1.050 OG so I'll use .75 oz of my hops (4.1%) to try for 13 IBU's in a 6.5 gallon boil.

I think I'm going to try the WB-06, I just wanted to make sure that the yeast would work with the fruit.
Appreciate the quick responses :mug:
