I'm planning on a brew day this Saturday and plan on making a light wheat beer with the following:
6.6 lbs Briess Bavarian wheat LME
.5 lbs Crystal 10 (steeping)
The only hop addition will probably be at 60 minutes, I'm using Hallertau hops (4.1%), and shooting for about 13 IBU.
Here is my question.... The fiancé wants a fruit beer so the above ingredients are the plan for the base, but I am not sure what yeast to use. I picked up some WB-06 at my local HB shop. Is this yeast good for a wheat beer that will be racked on to fruit (mixed berries) in secondary? Or should I go pick up a cleaner yeast like S-05? I keep my fermentation buckets in the basement, previous beers have fermented at a pretty stable 66-67 degrees.
