hey ya'll so I'm having a really hard time trying to figure out what I want to make next.... I have a really dang good Wiezenbock in bottles a Irish red in primary... but now what.... Any suggestions or ideas?
 
IPA, APA or a summer style Belgian, like a Wit or Saison. I've been recently getting a taste for Belgians, and am really starting to enjoy them. I'm also getting ready to brew a cream ale for my brew buddy, who appreciates good beer, but still likes his miller lite.
 
I've been plagued by the same question. I think I've settled on a dunkelweizen. I like malty, I like wheat. I should like them combined.

Besides, I already have a cream, blonde and rye ready for July 4th weekend, need something a little darker. I think I can bang out another two batches in time. Dunkelweizen and Belgian pale ale.
 
I think there is nothing better in the spring/summer than a good saison or biere de garde. They have a lot of flavor, but since they finish dry they are still refreshing. Everyone always suggests a cream ale, blonde, or kolsch at this time of year, but I like a bit more malty flavor.(though I have brewed a lot of cream ales lately as I try to perfect a recipe that will get my girlfriend to stop buying Bud light) Since the heat is coming soon and I am still without good temperature control, I think I am going to do a series of saisons this summer so I don't have to worry about temps getting too high. I just made the first a couple days ago, a version of Surly's CynicalE saison, and after checking on it today I am really excited about how it will turn out. I have never smelled such delicious blowoff from an airlock. I can really smell the slight pepper and fruity characteristics coming out. Smells kind of like peppered apricots. The aroma is filling the room where I keep my carboys, and I found myself going in there over and over again today to get another whiff. I definately will have to use WLP550 again. I can post the recipe if you like.
 
Can't go wrong with a nice massive Imperial Stout on a nice summer day.
 
I was also thinking along the lines of kolsch or saison but I haven't had the pleasure of tasting either so I'm not entirely sure if I would like them or not. Given my region I am definitely a minority, as I'm not a big hop head and find most IPA or APAs a little too hoppy. I prefer a little more malty beers without a whole lot of bitterness that are a little more balanced. I think I would prefer to do something on the lighter side things...
 
Sounds like saison and biere de garde would be right up your alley. If you can get Great Divide breweries' beers where you live, try out "Colette" - that is a really tasty one. Saisons can vary a lot, but for the most part they are malty up front but with a crisp,somewhat fruity/tart finish. Kind of the best of both worlds IMO. A lot of people like to use spices or orange peel in them, but I prefer without spices. Most saisons have a decent amount of hops, but more aroma hops and less bittering. Like you, I lean towards more malty, less bitter beers and saison has become my style of choice during the warmer months(don't tell anyone else, because I'll become an outcast, but I secretly hate IPA). I mean, don't get me wrong - I do like hops. But I prefer a beer to be BALANCED, not just a hoppy punch in the face. It's really easy to make a beer super hoppy - making one that has good hop character but is still well balanced is more of a challenge.
 
I am not really sure if anyone around has either of those beers... I think I should be able to find it after all I live in like microbrew/beer heaven... I am glad to hear that I am not the only one who doesn't like IPA/APA's . I can't help but ask about the Kolsch style and lagers. as well as if any one has some good recipes they wouldn't mind sharing. ( yes I AM aware of the recipe database) I would simply like to hear recommendations...
