I got a new 14” stainless skillet and used it for the first time to boil spaghetti noodles in tonight. Now it has about 10 spots that won’t go away! I used a green scrubby with dish soap first, then brought out my OxyClean and can’t get rid of them. In the sink they looked black but in this light they look light. How do I get rid of them? Barkeeper's Friend. It will clean anything and it's safe for stainless.

Cook something acidic, or soak it in Starsan for a bit.

Tried something new, well, new to me anyway; smoke-roasted butternut squash. Scored each to help hold some of the butter & brown sugar & smoked it on cherry wood. It wasn't perfect, but it was very tasty; as were the rosemary/garlic brats I smoked to go with the squash. Also stir-fried some brussels sprouts & mushrooms in a bit of EVOO, it was a tasty & filling meal.

Making a big pot of kimchi jjigae (stew) today. My kimchi is several months old now. Pork is marinating in...

Mirin (sweet sake)
Tiny bit of dark soy sauce
Gochugaru (Korean pepper flakes)
Minced garlic and white part of green onion
Black pepper
Dark sesame oil

Still need to prepare the dashi stock but im cheating by using the teabags so its quick to make. Nice bags though with dried anchovies, shiitake and seaweed. Good stuff from Japan or Korea.

Dashi tea bags! Awesome. Somehow I’ve never heard of those. It’s always a pain to strain the Benito flakes whenever I make miso ramen.
 
Yep. Mine are sardine and kelp. They also sell them with bonito. I found one that has sardine, kelp, shiitake and radish too. Some have a little shrimp also.

Tell you what though. Look for Riken dashi powder. I think its excellent. The sodium is super low and no MSG. My market hasnt had it in ages so i got the "tea bags"

IIRC my market had them with 7 5gram packets. Price was maybe $3-4. Each pack made around 600-750ml of dashi stock. Not the cheapest around but it is made in Japan. The sardines come from Nagasaki and the kelp comes from Hokkaido so its fairly good quality for an instant.

Radish (daikon), dried mushrooms and/or onion are sometimes boiled first in water before adding the other stuff. Then its all strained out.
 
Big cauldron of Gumbo. Chicken, andoulli sausage, spicy hmong sausage from a local meat market, shrimp, lobster and crawfish and plenty of okra.

Deep fried beef chimichangas.

Been trying something new with my “taco beef” mixture. Making the sauce from all veggies, spices and beer, blending it, then finishing the cooked beef in that.

Just a blend of chopped squash/zucchini, mushrooms, half an onion, maybe shredded carrots, your choice of pepper(s), some fresh diced tomato, and then finish sautéing with the spices, beer & whatever else you like. Blend until smooth.
 
View attachment 586955 It's almost 2 weeks since I strained my knee... Still don't feel like standing around cooking, but put this together on account that it is the first day of Oktoberfest in Hellen GA.
PTN's available for a reasonable FaceTime rate to look at that knee. Results may vary.

Sry to hear hoppy2bmerry. My buddy swears by cbd cream, not sure if thats legal there. I finally tried it and wow it did work. All my aches get big ice packs, and if that doesnt work, heat.

My mom fell and broke 3 ribs about a month ago. She is just now starting to get around like normal. Wish I’d heard of this cbd cream earlier...
 
Man sorry to hear. Yeah my friend took a softball to the rib and that is what he uses it for. To be sure in his opinion not so healing but a long lasting pain reliever. It has no thc or high to it at all, people use it on children. I have always been like yeah yeah, but it worked well with a little use. He says he uses it all day. He said with his cracked rib he couldn't play without it.
