Let's see how this goes using a cast iron pan my mom has never used

Nice. I got mine a year ago and I’ve tried to cook everything I can with it.

Chicken, bone in pork roasts, and shrimp are my favorite. Chicken I don’t do any other way though, especially dark meat.

Unfortunately I haven’t been able to make a piece of beef that rivals a grill. Something about the way the fat renders just leaves a big flavor void.

It’s fun to experiment though!

No pictures but Temptd’s Chili Colorado recipe is everybody’s favorite thing I have made in my new Instant Pot! A close second is the Carnitas I did a couple of nights ago then crisped up under the broiler just before serving.

Also tried a new cookie recipe the other day that everybody seems to be enjoying. Chocolate chip, cranberry, and walnuts.

Very cool you're making pasta. Love to do that myself.

If you have a food processor, then next time you make pasta try substituting baby spinach for the water/eggs. Add flour to the food processor, turn it on, and add 1 egg then fresh spinach leafs until you get the consistency you like for the pasta, which for me is fairly dry - not sticky. You should use about 2 oz spinach per cup of flour (approx).

Top with homemade alfredo (cream, Parmesan cheese, garlic). I like to add chicken chunks to the alfredo. Garnish with parsely. I think the white sauce on the bright green fettuccini is a great presentation. It eats pretty good too :)
 
Annual tradition - when the out of town family heads home after the holidays, that marks the end of about two weeks of lots of wonderful food, which is too bad, but also marks the end of LOTS of wonderful food, which is good.

The day everyone heads home, I make grilled veggies for SWMBO and me at home. Tonight it’s grilled ratatouille.
 
@passedpawn thanks for the recipe. I have been wondering how to do that. We have been wanting to make that to sneak our kids some vegetables. I have been wondering about how dry of dough to work with. Need to try a little drier
 
Unfortunately, no pictures of mine, but I did make this over the holidays. I've never been a fan of any the different winter squashes but this is sooooo good, it tastes as good as anything from a five star restaurant. It does take some time and effort to make. A stick blender definitely makes it easier and a fine strainer is a must.

Its pretty well documented by now my use of kitchen gadgetry. I use a pressure cooker, a hot shot water heater, sandwich maker, etc..well now the air fryer. Mom had one of the early ones 23 years ago in high school. And we would throw taquitos and egg rolls and Nuggets in it. Well she gave me one for Christmas and I thought here we go again another one of these silly gadgets. But I am really loving this thing. If nothing else it works as an amazing microwave. Almost as fast but with a way better Heating quality. I threw in some leftovers from New Year's Eve, two prime rib ribs and some potatoes. They came out like they were reheated in an oven in a covered dish for 40 minutes. The meat on the rib bone was hot and the fat was seared and sizzling. Next up a bagel. Half a bagel was toasted in 3 or 4 minutes. And I mean toasted. It was very chewy on the inside and very crunchy on the outside. It would take my toaster two or three rounds to do that to a bagel. Next I buttered a couple slices of bread, cooked for 2 min and then flipped and put cheese on and then combined for a sandwich. Cooked for 2 min more and it was beautiful. Next cooked 4 brats. 20 mins and they were nice, then some potatoes and breaded carrots, which would have been amazing if sliced. Overall I think for one person this is a really great thing. Maybe two people. You can throw into brats small batch of fries and a couple carrots and cook your whole meal at once. The inability to cook a whole meal for a family at once limits its use. Its ability to make these delicious carrot fries and or any other vegetables real quick will keep it on the counter as well as it's use as a microwave. Just my 2c. for now. Mostly can't wait to take it camping.

Made quesadillas 3 ways. Chicken and cheddar, thin sliced rib roast with smoked Gouda and veggie with both cheeses. Dirty rice, salsa and guacamole on the side.

So glad that Chili Colorado recipe is a hit - here too! I LOVE my Instant Pot, had it a couple years now - made my blackeyed peas in it for NY Day, took 22 minutes, starting with beans that I'd soaked overnight. That cooker is one of my very favorite kitchen gadgets!

No Thanksgiving, Christmas cooking from me - we were in the throes of selling one house, buying another, and driving 12 hours with two cats to get to our new place. But NY Day is not right without Hoppin' John and the Instant Pot made it do-able, surrounded by mountains of what seem to be ever-multiplying moving boxes! LOL!
