Beautiful. What flour did you use? Did you buy it or grind? I've read a couple of books that really recommend grinding your own. Whatever you it did looks awesome.

I've really been getting into using freshly ground, local grains. The above dish, I used a whole wheat flour from Alprilla Farm in Essex, MA. It's so cool to actually see the bran and germ in the flour, something you just can't get from commercial flours. I also love Maine Grains from Skowhegan, ME. I believe you can order their stuff online.

I was going to say the flour looks rustic. I'm up in Essex all the time in the summer.

The town of Skowhegan started a conference when they were first getting started. They had classes on farming, milling, brewing, baking and even home pizza brick oven building. I think it's more about business and farming now that it has taken off so well.

I keep delaying a road trip west of me to a couple of breweries I really like. Four Stars has an end of a season festival. I think I'll attend it this year. The breweries are close by.

Additionally with grains they also grow other stuff

Easy and fast! I'm loving the pressure cooker. I did chili last night in a fraction of the time I normally have to braise it and with indistinguishable results :)

Homemade Russian dressing
1/2 cup mayonnaise
2 tablespoons ketchup
2-3 tablespoons fine chopped homemade pickles
2 tablespoons red balsamic vinegar
1.5 teaspoon Meyers horseradish
1 teaspoon Worcestershire sauce
1/2 teaspoon Sriracha
1/4 teaspoon paprika
1/4 teaspoon freshly ground pepper
Pinch of white sugar

The 6lb flat cut corned beef just came out of the oven. Probably wont be having them tonite

Its my only Victorinox. All my others are Henckel Four Star and Five Star. Works great for carving but IMO its was a tad over priced at about $60. I didnt shop around though. I probably could have found it for closer to $45.
 
I cut into a homemade wheel of cotswold cheese last night. It was awesome (if you like a soft cheese filled with minced onions and chives). Unlike the last two of these I made, this one I brined to harden the rind. The rind is darker yellow and skin-like. I'll probably do this in the future - I like it this way.
