I saw some fresh chicken in the fridge and thought, "I should make Champagne Chicken!" Then I look over at the counter and see a package of Shallots. She's way ahead of me!

So the big question now is, do I cook Champagne Chicken tonight? Or brew a batch of Beer? Champagne chicken takes up too much of the stovetop for both to happen at the same time. (I mean, I *could* take my mash tun off the stovetop during the mash and cook the chicken then, but I think that would be showing off too much. I can't let her know that I can multitask that well while brewing.)

Taco Tuesday!

Pan seared halibut, cabbage, pickled onions, pickled Fresno chiles, crema, and hot sauce.

No pics, but yesterday SWMBO had some kind of work luncheon and asked for a light dinner. So I got one crown of broccoli, one red pepper, one yellow squash and one orange carrot. Sliced them all up, tossed in olive oil, salt and some herb blend from the cabinet, and put them in a hot skillet in a 400° oven. Meanwhile, I peeled some shrimp, tossed them with garlic and olive oil and, when the veggies were softening up, I added the shrimp to the skillet and let them cook until done.

Very tasty, very easy and very light, yet satisfying.
