Friday night I did a shrimp stir-fry, I know, I stir-fry a lot, but it's a quick & easy way to make a tasty meal. Shrimp, baby carrots, crimini mushrooms, celery + leaves, yellow crookneck squash, garlic, scallions, 1 thumb fresh ginger, lots of sweet basil, edamame, asparagus, shelled pumpkin seeds, and a couple dashes each of fish sauce & soy sauce.
Sunday night I marinated some boneless, skinless chicken breasts in a sweet, slightly spicy mango marinade for about 18 hrs, then wrapped them in thick sliced peppered bacon (3lbs of bacon!) and baked 'em in the oven @ 350*F. for about an hour & 20 mins. Served this up with a mix of veggies (broccoli, cauliflower, carrots, yellow squash & zucchini, with a bit of tarragon.)
