Friday night I did a shrimp stir-fry, I know, I stir-fry a lot, but it's a quick & easy way to make a tasty meal. Shrimp, baby carrots, crimini mushrooms, celery + leaves, yellow crookneck squash, garlic, scallions, 1 thumb fresh ginger, lots of sweet basil, edamame, asparagus, shelled pumpkin seeds, and a couple dashes each of fish sauce & soy sauce.

Sunday night I marinated some boneless, skinless chicken breasts in a sweet, slightly spicy mango marinade for about 18 hrs, then wrapped them in thick sliced peppered bacon (3lbs of bacon!) and baked 'em in the oven @ 350*F. for about an hour & 20 mins. Served this up with a mix of veggies (broccoli, cauliflower, carrots, yellow squash & zucchini, with a bit of tarragon.)

Nothing this weekend. Wife and I went to GR for a brewery tour on Saturday. I'm going to start thinking of something to make one of these nights. We still got pizza and Cheese soup leftovers, so I don't want to treat the family to anything really nice until that's gone.
 
A friend gave us some commercially prepared and frozen apple smoked bacon as a Christmas present. When we had some last week I thought that the bacon fat was too good to dispose of, so I stored it for a while.

When making bread Saturday I found a great use for the fat. I used it as a substitute for butter in my white bread recipe. There's just a hint of smoked bacon when you toast the bread. It seems to go well with everything except as a PB&J sandwich.

I just tossed a chicken in the oven to roast. Stuffed with celery, carrots, garlic, and onion along with some fresh herbs (rosemary, thyme, and oregano). Rubbed with a mixture of S&P, garlic, cayenne, chipotle, and more fresh herbs.
 
Just packed away the leftover chicken and dumplings. Was more of a soup than a stew.

Also made T-bones and asparagus last night; splurged at Costco.
 
Pounded and braised chic breast in a soy / peach juice / apple cider vinegar sauce smothered in a peach/mango salsa. Side of rosemary roasted potatoes. ImageUploadedByHome Brew1392746168.404753.jpg

I have yucca (aka Adam's Needle) growing around the lamp post out front. But aren't the tubers from them loaded with sodium cyanide till cooked?
 
Translation: Yummy. Can I come next time?

Pernil Asado - pork shoulder.

Yuca con mojo - yuca root with garlic sauce (think baked French fries, but sooooo much better)

Arroz con gandules - rice with pigeon peas or beans.

It was a balmy 45 today (first time above freezing in almost a month) so I fired up the Weber kettle grill for some grilled shrimp. I kept it simple - just olive oil, Kosher salt, and pepper, and cooked it over a small fire at a low burn. That let the shrimp sit there for a while and soak up the smokiness, and they were awesome. SWMBO made some scratch biscuits and subbed some bacon fat for shortening, which made for all kinds of awesome. And veggies too.

Put the fire out and covered the grill in anticipation of the sub freezing temps and freezing rain, followed by a couple inches of snow tomorrow.
 
Whole Pork Butt went on the smoker last night. We are serving this weekend for a get-together at our house, but the temps made me want to cook it now. I started it about 6 last night. Put a couple of loads of chips on and about bedtime let it go all night. This morning I started mopping it. I actually have to leave work to run home and mop again. Wont' be able to mop as often as I'd like, but I'll hit it when I can.

Butts usually take 12 hours minimum, but this one is so big I might need to leave it on until late tonight.

I've been cutting my butts into smaller hunks. Smoke faster, less fuel used, and moar bark. :p

Win. Win. Win.

Thats a brilliant idea for the unfortunately already deboned Costco ones. Spread them out, more surface area, more bark. Yum. going to have to try this next time I buy em from there.

Cutting Butts? Where are we? A Turkish prison? Isn't that where all of the Butt stabbings happen?
 
Yeah, I thought of that too, but wasn't sure if it would mess anything up. This is the biggest butt I've smoked so far. It takes a while to smoke, but at least the meat isn't very expensive. I haven't taken the temp yet, but it looks like it is going to take a while longer yet.
