AWESOME! I loves me some catfish! I think my fav is pecan crusted catfish, but I still haven't gotten the hushpuppies right yet.
Regards, GF. :mug:

No pic... sorry I'm a slacker.... but last night was Bacon/Beer/Mac & Cheese. Just a real cheesy mac & cheese with a ton of bacon, some bacon grease and an amber ale added to the roux. Real next level mac & cheese. Freaking awesome!

Bacon brown sugar toffee. Pictures as soon as it's cooled and broken up.

Sounds pretty damn good! One of my all time favorite quick meals is mac & cheese topped with toasted panko, extra sharp cheddar and sriracha. Never tried adding bacon, or beer!

We slow cooked a roast in the crock pot on Saturday. Then my wife decided I HAD to buy Chinese when I went to Cadillac to get a few things at the Gordon's store. So at 10:00 at night I ask her how long she planned to cook the roast...

OH SHT! She had forgotten it was still cooking!

So we put it in the fridge and back in the crock pot to heat up on Sunday. It was actually REALLY good with the onions sweet and carmelized. Some of the best gravy ever from that!

This is happening this weekend. My wife is going to LOVE this. I'm already tingly with anticipation of the appreciation!

Well, it didn't happen this weekend. Got busy with brewing and had a change of plans and then had to work on my sister's car.

Doesn't look like I'll have any time tonight to make it, but I'm shooting for Tuesday! (If jury duty doesn't interfere.)

Some standard super bowl eats yesterday... chili, guacamole, wings, but I also made drunken meatballs. Standard meat ball with a little sriracha for heat. The sauce was a base of Jack Daniels, soy sauce, dejon mustard, and rum. It also contained sesame seeds, brown sugar, chives, garlic, onion, red pepper flakes, and a dash of liquid smoke. Pretty damn tasty!

Again, I slacked off. Was too busy eating and drinking to take pics.

Still waiting to cook that whatever it was cake. Now it looks like I will be busy til Sunday, and Sunday might not work either. I am craving to cook something interesting, but I've got to help at a High School Band Carnival again this year and starting last night I will be busy every day after work and all day on Saturday. I really need to get a second person to help me with this. Just got to figure out how to share some homebrew while we set up the dunk tank in the school cafeteria!

Wait! I think I have a Thermos in the back of the cupboard...

Well, nothing this last weekend.

But the middle of next week, I'll be cooking up a few gallons of chicken and sausage gumbo and serving it over rice. I work at a natural gas pumping station, and a contractor rebuilding one of our compressor units has offered to feed his guys and ours both, if I'll do the cooking....

Of course, it isn't 'authentic' gumbo, even though I was taught by an authentic Cajun; since this is Southern California it has to have cilantro and jalapenos in it....:D

But no one has ever complained in the past.

Pizza with pepperoni, pineapple and jalapeno is the same way. It sounds wrong, but the meat, sweet, and spice work beautifully together.

That actually sounds pretty good. I'll have to try it.

I was getting ready to make an open-faced steak tartare sandwich one time, and asked my older brother if he wanted one. He asked what was in it, and I told him: finely minced raw sirloin and white onion over Russian rye bread, with a raw egg cracked on top and a heavy layer of sea salt and fresh-ground black pepper over everything.

He said, "well, just imagining how the various tastes would blend together, it sounds really good. But if I took a bite of raw meat and eggs, I'd barf all over your kitchen."

His loss; I made two for me instead. No one ever accused him of a lack of courage; he watched me eat them without even flinching. :)

My favorite pizza is pineapple and bacon. The sweet and salty are awesome together. I could see your pizza above being very good!
