There’s still something off with this beer even though it’s a different recipe. I’ve come to the conclusion that there has to be something wrong with my water adjustments. I BIAB and use Bru’n water to build my water. Because these stouts use a small grain bill, I’ve been mashing with a smaller amount of water to thicken the mash and doing a pseudo sparge over the bag to get to my boil volume. I’m wondering if I’m using Bru’n water incorrectly and essentially double treating my water. That’s all I can think of right now. This beer tastes a little thin and acidic... just like a bunch of my previous attempts. Oh well, down the hatch.

@camonick I assume this is a dry Irish Stout. It seems that a Guinness clone is not as simple as expected...I have my own attempt keg conditioning now. It seems that perhaps steeping the roasted barley in a more acidic bath or adding later in the mash is part of it. We'll see how mine does. It is my first iteration, though. Cheers! RIck

I wish you luck with your brew. I have been trying for a very long time to duplicate Guinness Draught. I haven’t done it yet and feel like I’m actually getting farther away. I’ve tried virtually everything I’ve read about and still haven’t made it. I really thought this batch was going to be better, but after drinking a few, it isn’t!:no: I won’t give up though. After much thought and really thinking about how this tastes, it has to be the way I’m treating my water.
 
I have seen so many people recommend a MO/EKG smash on Reddit and I keep threatening to make one. Might be a good brew to try out on my new rig.
I had a 10 lb bag of MO in my grain stash so I decided to do it. I got some guidance from @Immocles for this brew. I hope it turns out!! This hydrometer sample tastes promising.

Drinking a couple after a freaky diagnosis...sigh...bruised Ulnar nerve, two torn tendons in my hand and two cracked wrist bones. :confused: Going to specialist this coming week...c'mon no surgery. Note to self...replace your studs on your wading boots before winter!
