MoreBeer Hefeweizen Extract Recipe - Target SRM (4-7), I think it came out dark approx. 13. It doesn't have the strong "wheaty" aroma I like in a Hefe and has a tart finish. Not sure what I did . . . not bad though.

You can fiddle with adding more/most of the fermentables much later in the boil or even at flameout. Buying the ingredients based on the kit list (not cheaper) and subbing DME (80% of LME is the conversion) can get you lighter if you really want that.
Edit: still a very, very nice looking beer, BTW.

Actually, my favorite is to cut an avocado in half, and throw a healthy spoon of salsa on top.
Guacamole on the half shell.

Maybe. Depends on what you like. St. Arnold's has a nice barrel program. Not the typical bourbon barrel stuff. A brewery I finally connected with in Houston has a killer NEIPA, Astral Psychonaut. Jester king of course, but they distribute widely. If you're in to big, aged stouts, I have a fairly extensive cellar.
