Unfortunately i dont have any sour pbr going right now. My vegan brew store hasnt sold the right type of conflict free corn yet. Fingers crossed it comes in soon!

WHAT ABOUT THE GLUTEN!!!! You should really switch to gluten free soy based pickled brussel sprouts for your barrel sour project. But only if the barrel has been used for certified free trade cold brew coffee previously, or you aren't doing it right.

On topic: cup o' Joe and our buyers want us to make up the whole difference cause by the crappy appraisal. Wish I could have a beer right now.


Depending on what the market is like by you, I'd give the buyers the finger. If they really want to buy it, they'll work with you. If not, someone else will buy it and will get it appraised higher. Appraisers are pretty much the worst.

You can also ask the buyer to switch lenders. That's the only way they can get a new appraisal. The appraisal appeals process is pretty worthless IMO.

Thanks for the encouragement. We're gonna make 'em sweat and call their bluff. We have our new house already so it's only money if we have to make dual payments for a bit. They have nowhere to go. Only two comparable houses for sale near us and ours is by far the nicest of the 3.

I would dump it. No point in letting it ride as I can only imagine it getting worse. Not sure what happened but they all had a huge amount of sediment in the bottle that starts mingling aggressively when you open it which leads to gushing. Taste is terrible.

Water before more coffee. Not a lot of motivation today but might put together a couple recipes to brew next weekend.

Hey, speaking of beer and being off topic... I managed to achieve the most pillowy mouthfeel I've ever done with that Buffalo Sweat clone. I don't know if it's the water additions or the oats or both, but I take a 'normal' sized drink and it feels like too much, before giving way to a crisp finish (no doubt due to the low abv).

Is this your experience with this brew or did I finally nail down my water profile? Having never brewed it, I don't really have a comparison.

Flaked oat does wonders for mouthfeel. not sure what sort of water profile you are working with, but it may be a one-two punch, but oats for sure would be a large factor in that.

My mother actually has a gluten intolerance (not the fake kind, like cant breathe if she eats too much of it) and I've considered making a gluten free beer for her to try, but I enjoy my integrity too much to do such a thing. ;)

Exactly what duffman said. Oats help but water profile also encourages better mouthfeel. I havent been satisfied with how mine how turned out in that aspect, just knowing how the real buff sweat tastes, and I think I will use a yeast with less attenuation next time I brew it. did you use 1098?

Yeah I wasn't too excited about having to dump them all. I dont remember ever having that much sediment in the bottle but if that was the case, I imagine that too much yeast autolysis caused it.

Yeah, I figured as much... But it's different than Tallgrass's version. I would describe it as fluffy almost.

S04... So basically, yes. Finished right at 1.019

Using the new formula, I think it finished at 13%... Old formula says 5.3% though.

Maybe you should let them know that it may be a good thing that it just came up low. That should affect their personal property taxes.

Sucks. I'll take some of that carbonation for mine. Just opened up a 6 pack of quad last weekend and reyeasted in the bottles with some 1118 as a last ditch effort. It's like drinking some kind of sweet 11% tea beverage now without any carb...

Hope it's not a rumble seat. Those suck. I was the jumper for my brother when I started... man we had a blast. Not to mention we would complete our route and be home by noon.
