Hb Bourbon Barrel Porter NB Kit I brewed 7/30/16. It was so overly tannic oak dryness at the beginning that I kinda gave up on it and pushed most the batch into the corner. I have opened them occasionally and it took a while but it has slowly been getting better. Sweetness is coming through, oak is still there but has settled down and the beer is starting to round out

Here's a thought if you just never get happy with it or if you just want to do an experiment....dump it back into the fermenter and give it a few days to get flat and then pitch some Brett and let it ride for about a year....I did it with a porter gone wrong and it actually turned out really good after a year on the Brett.... mine had been sitting in the back of the fridge in a keg and still on the gas before I ever started the Brett process and it turned out really good... I just drink my last bottle a few weeks ago and I was really sad to see it go... kind of funny that I was contemplating dumping it before I repurposed it..... anyway just a thought...cheers
