AL brewed Belgian white. They added kaffir lime leaves, fresh ginger and chamomile flowers to the brew but the additions are so subtle that they don't interfere with the definite wit character. Tasty beer, good body.

Here’s one we don’t get around here very often – Ayinger Maibock!
This is a beer that bites you back! Drinking almost like a Dortmunder or a really heavy Helles – at 7.0% ABV, it definitely is a bigger beer than many others out there.
Maibock beers are Bock beers, designed for Spring or May release for Spring festivals. They are big beers and while very malty, some have a touch more hops to them. It’s a big balanced beer.
I poured off a bit into a glass to show you the color. Ayinger makes great beers, they are really dialed in! Prost!

My first try at HM pizza in a cast iron pan on the Weber charcoal. Turned out mighty tasty, despite my cobbling together the ingredients. Didn't make enough dough to bring it to the pan's edges, but will make a little more dough next time.

HB Amber Ale while brewing a Blonde Ale.
I don't really understand how this works but did the yogurt/yeast thing again about 3hrs ago. Mind you I had several beers and feeling it for sure. This is my 2nd Margarita, finished off the tequila and a couple beers I didn't pic. Also had a couple shots of Elderberry liquor. Believe or not, I'm more sober now then 3hrs ago. Crazy!
Still walking. This is up there with Lemoncello IMHO.

1st 10min of Axel -F, love it already! Working on the ratios but that Ocho Tequila is really good and smooth, more of a sipping tequila... whatever.
Dogs miss the wife I think. She's enjoying the Oregon coast far away from the fires I hope. Oh, I also tried the Jim Koch thing of having yogurt and bread yeast to help drunkenness. Had 9 shots of tequila and a pour of 11.5% beer in 4 hours. Feel great!!Party of one..ish!
This makes me miss home. Even in WI I can't find a Blue Light, not that I'm searching it out. But I wish I could have one.

That's were the Belgian Quads started all those years ago but it's been morphed over the years.
Here's the recipe..for me it came out at 11.5% (1.108 - 1.029). I brewed this exact recipe (no cherry) several months back but my brew day was a disaster. I bottled the Quad in this case. After a month or so, it became the best Quad I've ever made. Flavor was beautifully over the top.
Fermentation temp is the key. Keep it high, like 80ish, for the esters to shine. I regret adding the cherry infused version to the the plain version. The plain was starting to shine after just a few days kegging. But make sure you use tart cherries. I've tried this with sweet cherries but came out like cough syrup.
The other key is water chemistry. I've tried a bunch of different ones but The Apartment Brewer's chemistry is exactly what I like. It's softer then I think what most people think of for a Quad. That's obviously personal preference.
If you have questions about my notes feel free to PM me. Brew day went perfect. Fermentation was a hell on this batch. I use a Tilt2 to get real time data, love it! My next batch will be 9.5% max.

I have a bunch of that in my fridge, not really a fan. Wife seems to like it though.
Out back in the gazebo with a HB ESB. It's cooled to mid-80s today.
