I bewed by second batch 2 weeks ago, an orange honey wheat. I thought I was doing every thing correctly and read my OG at 1.05 at 74* right before I pitched my yeast (Safele - US-05 American Ale), so 1.052. I know it's a little warm but I ran out of ice for an ice bath and don't have a wort chiller and I dind't want to wait for bacteria to grow etc. It seemed like it was fermenting fine the next morning as I had steady bubbles. It was still bubbling every 30 seconds after 2 days. The temp in my basement is around 73*. I just took my first gravity reading tonight and it was 1.121. ?????? not normal, right? Does anyone have any advice for me? I forget what the gravity of my first batch was so I'm not sure if my hydrometer is acurate. Water is 1.000 though.

Did you spin the Hydrometer? sometimes, co2 bubbles can actually elevate the hydrometer making the reading appear high. Just a thought.

Well, i just checked it again. 1.012. Sorry about that. It's my 2nd home brew. Guess I need to get more comfortable with the equipment.
