Can anybody help me out with a water profile for a Dunkelweizen?

You should find that the 'boiled' Munich water profile presented in the Bru'n Water software is relatively suited for brewing a dunkelweizen. It has somewhat high bicarbonates (alkalinity) that will need to be neutralized with lactic acid, but the other mineralization is fairly low.
