I'll be giving my hefeweizen recipe a round 2 in a week or so. This time I'll be doing a decoction mash and I can't find anything on beersmith that will calculate it for me. I'm thinking about just having 10 gallons on standby, using 3.5 gallons as strike water and just keep sparging until I have 6 gallons in the boil kettle. Also, i made a yeast starter last time and ended up with nearly 0 banana clove flavors. Would it be better to just pitch a packet of the wyeast 3068 and let it roll?
 
I'm doing my first decoction this weekend as well. Beersmith does those calculations! just program a temperature step into your mash and it gives you the options for how to achieve that (water infusion, decoct, direct fire) choose decoction and it tells you amount of mash to boil to reach the temp step.

There is a thread going currently on getting more banana flavors which has a lot of good advice.
