Holy cow donthoseme...how many taps do you have?!?!

Just got a couple of those nifty Sam Adams beer glasses so I had to take a pic. Pacman Ale...I just can't get my pics to show the clarity (condensation mainly). This beer is crystal clear. I really like these beer glasses.

EDIT: Oh sh*t...gotta post a style/recipe per the op. I'm calling it a Belgian Pale Ale but...that's prob a stretch.

Pacman Ale
6 gal. batch
8# Pils
2# Munich
.25# each of Carapils, Aromatic, Caramunich

1.054 OG
1.011 FG
~24 IBU
med. noble hop aroma (I used Hallertau)
Mash @ 151-152 F for 60 min.
90 min. boil
Pacman yeast
Extremely tasty...clean with a slight malty sweetness.

Belgian Barleywine currently this guy is bulk aging in two corny kegs. I will carb one up in a month or so and then start to bottle it for aging, the other will stay in the keg forever (or until drank)

Pliny the Middle Child IPA A fantastic hop aroma with balanced bitter and a malty backbone. Great beer!

THANKS! It is a stellar beer... it is a variation on another recipe here, I took out the 10L and replaced it with 40L in a larger qty. to add some color and fullness. It will be a regular here.

NICE looking beer yourself!

PS...Thanks Donthoseme, I like to think my beer looks and tastes good (except for that damned diacetyl that I am battling with on my five gallon batches). I typically only drink it from a wine glass because of ease. I have them around. One day when I am cool like others here, I will buy different glassware for each beer.

Batch Size: 5.5 gal
OG = 1.053
FG = 1.010
ABV = 5.5%
SRM = 13.6
IBU = 88

Grain Bill:
5.5 lbs. Pale 2-Row
5.5 lbs. Munich

Mash at 150F for 90 min.
Single step, no mash-out, double batch sparge
90 min. boil

1/2 oz. of Millenium and Simcoe (each, typ) at 60 min.
1/2 oz. Simcoe at 30
1 oz. Centennial @ 7
1 oz. Centennial @ 4
2 oz. Summit @ flameout
2 oz. Summit dry for 7 days

2 packets US-05
Ferment at 68F for 2 weeks, 65F for final 1 week
Bottle carbonate and then cold-condition for 4 weeks (unless you only want to taste summit hops)

This is not technically an APA, according to BJCP guidelines, but it really only fits there. The calculated IBUs are excessive, but the hop flavor is completely dominant although not offensive.

I have really enjoyed this beer, I learned a lot about the effect of aging on the hop flavor profile. I also learned at all of a sudden after cold-conditioning for awhile, at a seemingly arbitrary moment in time, some batches of beer will become crystal clear. It's a very exciting moment for those of us who think that the visual experience of beer is not necessary for a good beer, but is absolutely essential for an excellent beer.
 
I have a Rye recipe in the database, but have been playing with it trying to come up with the perfect house version. Think this is it. Creamy smooth, with lots of rye flavor. I'll post the recipe soon.

My Imperial IPA - It's actually fairly clear, especially for dry hopping with 3oz, but my camera sucks. I thought it would turn out cloudy. It smells and tastes awesome. But I will wait on comp results to post it. If interested PM me.

"Honey-Do List Ale" or "Lawnmower Bomb"

Not may overall favorite, but a fun bottle to pass out...

Honey-Do Ale

  • 8 pounds Pale Malt - 2 Row
  • 5 Pounds Honey
  • 2 pounds flaked barley

  • 1.5 ounce Northern Brewer 8.8% AA 60 minutes
  • 1 ounce Cascade 6% 25 minutes

Wyeast London Ale Yeast (must use large starter to attenuate more)
OG: 1.075
FG: 1.008
IBU: 46

Mash grains at 150 for 75 minutes, batch sparge.
Boil 90 minutes adding honey at 60. This will reduce sweetness and make the "beer" dry. Ferment at mid to upper 60's for three weeks, condition for 2 weeks in secondary if you want to clarify more. Best if let condition/ferment for a total of 5 weeks. Should get almost 90%, or even better, attenuation do to the honey.

9% - 9.5% ABV should be the target. Suprisingly drinkable and refreshing.
