Batch Size: 5.5 gal
OG = 1.053
FG = 1.010
ABV = 5.5%
SRM = 13.6
IBU = 88
Grain Bill:
5.5 lbs. Pale 2-Row
5.5 lbs. Munich
Mash at 150F for 90 min.
Single step, no mash-out, double batch sparge
90 min. boil
1/2 oz. of Millenium and Simcoe (each, typ) at 60 min.
1/2 oz. Simcoe at 30
1 oz. Centennial @ 7
1 oz. Centennial @ 4
2 oz. Summit @ flameout
2 oz. Summit dry for 7 days
2 packets US-05
Ferment at 68F for 2 weeks, 65F for final 1 week
Bottle carbonate and then cold-condition for 4 weeks (unless you only want to taste summit hops)
This is not technically an APA, according to BJCP guidelines, but it really only fits there. The calculated IBUs are excessive, but the hop flavor is completely dominant although not offensive.
I have really enjoyed this beer, I learned a lot about the effect of aging on the hop flavor profile. I also learned at all of a sudden after cold-conditioning for awhile, at a seemingly arbitrary moment in time, some batches of beer will become crystal clear. It's a very exciting moment for those of us who think that the visual experience of beer is not necessary for a good beer, but is absolutely essential for an excellent beer.
