This recipe came about as a rexult of my incessant tinkering with other recipes. My APA's have either been Yooper's House APA (about 5 times) and Dude's Lake Walk APA (3 times). Recently, I've been toying with the idea of dialing back on the Crystal malts, which was also suggested by JZ's APA in Brewing Classic Styles. As you can see, I dialed the Crystal all the way down to zero.
The result was a wonderful grain maltiness, perfectly balanced by the brightness of Simcoe and Amarillo. You can dry hop this if you want, but I don't think it needs it - it's not an IPA after all.
Incidentally, I had problems with the mash which resulted in a mash of about 3 hours, during which the temperature fell to about 145. My FG ended up at 1.008, but I think 1.012 or so is a more realistic target. I haven't decided whether or not to try to repeat my mistakes on this, but it came out great!
