Using Vials to Keep Samples

Gold morning fellow brewers,

My first batch (Half-Baked Pumpkin Ale) has been brewed and is sitting in the primary, soon to be moved to the secondary.

I opened up the 5gal. glass carboy this past weekend to take a reading (beer is at a healthy 8.5% alcohol), and to of course taste what was left in the thief (very good so far).

This got me thinking. I would like to be able to keep a small sample of the beer from the day it was brewed, to each time it has been sampled along the way. I think it would be neat to see the progression in color, taste and mouth feel along the way.

I've searched around and found these amber colored glass vials: http://www.amazon.com/gp/product/B00I4ABY4E/?tag=skimlinks_replacement-20. The only thing I wasn't sure about is pressure... Because these are capped and because there is still sugar and yeast, I don't want these things to be exploding in the fridge. However, I would like to keep the samples chilled and fresh.

I've thought about either drilling a hole in the top or buying vials that come with orifice reducers and then not put on a cap. Or buying the 1oz bottles and filling them only half way.

Any ideas? Thanks in advance!

The samples are going to age whether they're in vials or in the fermenter, so I really don't see the point in all this.
