So for todays silly question

If I wanted don't want to use store bought apple juice when I make my first cider I need to freeze fresh cider. Would I be making things harder on myself doing this?

It may not be relevant, but the flavour part of the juice melts before the water so you can control the resulting SG (and potential ABV) by stopping the thaw when your target SG has been reached.

This is useful if the juice SG is lower than you need for the target ABV. It has the effect of concentrating the sugar and flavour compounds (the coloured bit).

The technique involves letting the thaw drain out of your container. The "coloured bit" melts and drains first, followed by the water.

Cheers!
